This week’s menu is inspired by two of the submissions to the Living Light video contest: Hot Raw Chef, 5 in 5. The Living Light Academy is a raw chef training school in California, and they periodically host contests that give experienced as well as new raw chefs the opportunity to compete for both exposure and prizes. This round’s theme was 5 in 5– recipes using 5 ingredients that can be made (or at least demonstrated in a video) in 5 minutes. I think those rules were applied pretty loosely (flavour enhancers didn’t count as ingredients), but there was certainly no shortage of creativity amongst the entries.
The winner was a pear napoleon with pistachio crumble and fig confit. Those are definitely delicious ingredients in my book, and the combination is bound to be wonderful…. I’m thinking they’d make an excellent ice cream flavour as well. I’ve modified the recipe a bit, to make a pear and walnut parfait with spiced cashew cream, but I wanted to give credit to chef Christina Archila for the inspiration.
The main course is inspired by the runner-up: Jill Kilpatrick submitted a recipe for Spicy Korean collard wraps. With this concept as well as traditional Korean bulgogi in mind, I decided to serve spicy Korean lettuce wraps.

Main course: spicy Korean lettuce wraps: Spicy pecan filling with veggies, wrapped in a crisp lettuce leaf and served with kim chi (Korean pickled cabbage). R60
Dessert: pear and walnut parfait: layers of pears, walnut-date crumble and spiced cashew cream. Heavenly for breakfast or dessert. R20

-any time after 11:30 at Fresh Earth, Emmarentia;
-any time after 12:00 at Roots, Illovo;
-from 13:00-15:00 at Jozi Uncooked in Observatory.
