For those reading this blog in the US or parts of Europe, you will be able to make this kelp noodle recipe as is. For those reading it here in South Africa, I’m afraid you’ll have to substitute vegetable noodles (made from spiralised or julienned carrots, sweet potatoes, parsnips or marrows/ courgettes). Hopefully we’ll have access to kelp noodles here soon. Watch this space. Just so you know, this is what the Sea Tangle kelp noodle package looks like:
Kelp noodles with vegetables and sesame-ginger sauce (serves 4)
1 packet of kelp noodles (or use about 4 large marrows/courgettes to make veg noodles)
1/4 head of red cabbage, shredded
3-4 carrots, julienned
1 cup mung bean sprouts
4 pieces of baby corn/mealies, sliced thin
1-2 red bell peppers, julienned
small handful of enoki mushrooms (optional but very nice in this dish)
4 brown mushrooms (e.g. baby bella), sliced thin and marinated in tamari and olive oil
1 spring onion, chopped
sesame ginger sauce (see below)
black sesame seeds for garnish
Instructions: Toss all ingredients together with sauce. Garnish with sesame seeds.
Sesame-ginger sauce – This sauce recipe can be found here. I increase the ginger a bit, since fresh ginger is so tasty and so good for you. You may want to add a little extra water as well. Basically, it’s tahini, tamari, fresh ginger, water and sesame oil. Seriously addictive.
Speaking of addictive, that brings us to dessert. These caramel filled brownies are a perennial hit. I think I’ll have to put them on the menu more often. Sadly, I can’t take credit for the recipe. I got it here. I did slightly modify the chocolate topping, but it’s fine the way it is on that website. Here are some shots from behind-the-scenes, making the caramel-filled brownies.
